Vegan Mayo

Looking for beautiful mayonnaise? This one is gorgeous, full stop. No qualifiers needed. It’s easy and IMHO better than any kind of mayo, vegan or not. Additionally, it’s almost strangely simple. No kind of fuss about any aspect, really just two requirements: an immersion blender and soy milk at room temperature. There is a place for oat, coconut, almond and other plant-based milks, but it’s not here. Soy milk emulsifies perfectly for that lovely mayo consistency we all crave.

Ingredients

1/2 cup original soy milk

2 teaspoons lemon juice

1 tsp mustard (classically Djon)

1/2 tsp garlic powder

1/2 tsp salt
1 teaspoon dijion mustard

1 cup grapeseed oil

Add all of your room temperature ingredients to the beaker that came with your immersion blender.

Blend on high for 10 to 20 seconds and — voila! — mayo.

(That sounds too easy, right? It really is that easy!)
